Enmoladas de Huevo

1 HERNÁN Mole Poblano pouch
2 cups stock or water
6 corn tortillas
1/4 cup oil for frying
6 eggs
Crema & queso fresca for garnish (optional)

1. Prepare Mole Poblano as per instructions on the pouch - just add 2 cups stock to mole paste in a sauce pan over medium heat. Stir and blend for 5-8 minutes. Set mole poblano aside.

2. Heat oil in a medium skillet until very hot. Coat each tortilla with oil on each side until it begins to fry, but still remains soft and malleable.  Drain tortillas on paper towels.

3. Prepare scrambled eggs and fill each tortilla with eggs.

4. Place filled tortilla on plate and pour mole making sure to cover all of tortilla.

5. Garnish with queso fresco or crema (optional).
