Rotisserie Chicken with HERNÁN Mole Poblano

Ingredients:
- 1 HERNAN Mole Poblano
- 1-2 cups water or broth
To serve:
- 1 bag spring mix
- 1 pint cherry tomatoes, cut in half
- ½ cup your favorite salad dressing
- 1 rotisserie chicken, cut into fourths
Step by Step Instructions:
- Add the contents of the mole package and 1 cup of water or broth to a saucepan. Bring to a simmer over medium heat while stirring, until blended.
- Add additional cup of water or more to reach the desired consistency.
- While the mole simmers, in a large bowl toss the spring mix and cherry tomatoes with the dressing.
- Remove the legs, and the breasts from the rotisserie chicken and divide them among the plates. Pour the warm mole poblano on top and serve with the spring mix salad.
