Rotisserie Chicken with HERNÁN Mole Poblano

Time: 10 minutes

 

Ingredients:

  • 1 HERNAN Mole Poblano 
  • 1-2 cups water or broth

 

To serve:

  • 1 bag spring mix
  • 1 pint cherry tomatoes, cut in half
  • ½ cup your favorite salad dressing
  • 1 rotisserie chicken, cut into fourths

 

Step by Step Instructions: 

  1. Add the contents of the mole package and 1 cup of water or broth to a saucepan. Bring to a simmer over medium heat while stirring, until blended.
  2. Add additional cup of water or more to reach the desired consistency. 
  3. While the mole simmers, in a large bowl toss the spring mix and cherry tomatoes with the dressing. 
  4. Remove the legs, and the breasts from the rotisserie chicken and divide them among the plates. Pour the warm mole poblano on top and serve with the spring mix salad.
